  刀削面是大同特色传统面食。刀削面因需要通过刀削制成而得名。传统的削面方法是一手托面,一手拿特制的弧形削刀,直接削到开水锅里。制成的面条形似柳叶,外滑内筋、软而不黏。面出锅后,配以各种卤,比如传统猪肉、浓香牛肉、清淡羊肉、什锦素菜等,另外还加卤鸡蛋、卤丸子、卤豆腐等辅料。
Datong sliced noodles is one of the most renowned traditional dishes in Datong. Its fame comes from the unique cooking method. The traditional way of slicing the noodles is holding the dough in one hand and a tile-shaped knife in the other while moving the knife on the dough, thus a cascade of slices pours into the water. Perfect noodles resemble willow leaves and have a slippery and chewy feel. The sliced noodles are served with a specially made meat sauce, such as minced pork, beef, mutton or assorted vegetarian etc. and served with sack food such as marinated egg, pork meat balls, marinated dried bean curt etc. which appeal to the palates of everyone.
