大同刀削面 | Datong Sliced Noodles
刀削面是大同特色传统面食。刀削面因需要通过刀削制成而
得名。传统的削面方法是一手托面,一手拿特制的弧形削刀,直
接削到开水锅里。制成的面条形似柳叶,外滑内筋、软而不黏。
面出锅后,配以各种卤,比如传统猪肉、浓香牛肉、清淡羊肉、
什锦素菜等,另外还加卤鸡蛋、卤丸子、卤豆腐等辅料。
Datong sliced noodles is one of the most
renowned traditional dishes in Datong. Its fame
comes from the unique cooking method. The
traditional way of slicing the noodles is holding
the dough in one hand and a tile-shaped knife in
the other while moving the knife on the dough,
thus a cascade of slices pours into the water.
Perfect noodles resemble willow leaves and have a slippery and chewy feel.
The sliced noodles are served with a specially made meat sauce, such as minced
pork, beef, mutton or assorted vegetarian etc. and served with sack food such as
marinated egg, pork meat balls, marinated dried bean curt etc. which appeal to the
palates of everyone.
凉粉 | Potato Jelly in Chili Sauce
凉粉是以大同当地产的土豆加工成淀粉制作而
成。主要调料有醋、葱、盐、辣椒油,还可以酌情增
加当地特产豆腐干、莲花豆等辅料。在大同最有名的
是浑源县凉粉,具有 “滑嫩爽口、辣而不涩、香而纯
正” 的独特风味。
Potato jelly in chili sauce is made of flour
ground from potatoes produced in Datong.
The ingredients are diverse, including
vinegar, chopped green onions, salt and chili
sauce. It can also be served with shredded
dried Tofu, flavored broad beans etc. to make
it even tastier. Hunyuan County in Datong is
the most famous area for potato jelly with its
unique taste.
